This quiche recipe is super quick and easy! I wasn’t sure what to expect while it was in the oven…but I’m quite proud to say that it turned out really well! Quiche’s are a pretty forgiving dish, you can pretty much throw anything in, besides the kitchen sink of course, and it’ll still taste good!

-Four 7-inch tortillas (I used whole wheat but you can use white)
-About 1 1/2 cup of broccoli florets
-some extra-virgin olive oil
-1 teaspoon of margarine or butter
-1/2 an onion
-1 cup of grated carrot
-3 eggs
-1 cup of cheddar cheese
-1/2 cup of plain Greek yogurt
-1/4 to 1/2 cup of cottage cheese
-1 teaspoon of dill
-Salt and Pepper

Preheat your oven to 375 degrees F.

In a 9-inch pie plate, butter each tortilla before overlapping them to make the crust.

Chop up the onion finely (~1/4 inch). Mince garlic until fine. Place garlic and onion in a bowl. Now grate the carrot until you have about a cup. Cut the broccoli into small florets. Grate about a cup of cheese.

In a medium bowl, whisk together the eggs, yogurt, cottage cheese, dill, salt and pepper.

Now, steam your broccoli in the microwave for 45 seconds-1 minute. In a skillet, add the olive oil and butter over medium-high heat.

Add your onions and stir them around until golden. Stir in your carrots for about a minute. Turn off the heat. Add the broccoli.

Spread evenly in the tortilla crust  and sprinkle half of the cheese on top. Now add the egg mixture evenly, and add the rest of the cheese on top as well.

Bake in the oven until egg poofs up and cheese has browned. About 30 minutes. Test to make sure the egg is cooked by using a knife to test the middle. Let it rest for 10 minutes before serving. Enjoy!
